Onion and Parsley Salad

This onion and parsley salad is so light and bright, it makes the perfect complement to any kind of grilled meat. That’s exactly how it served in Lebanon, on a platter of grilled Kabobs, Kafta and Shawarma! This salad is very easy to make, and only requires a handful of ingredients. Sumac (Summāq) is the main seasoning and is found at any middle eastern grocery store. It has a lemony taste and used quite often in Lebanese cooking.
STEP 1
Begin with washing the bunch of parsley. Cut off the stems and finely chop.
STEP 2
Slice your onion into thin slices. If find raw onion to be very strong, you can soak the onion in a bowl of cold water for about 20 minutes to lessen the intensity.

STEP 3
Add the parsley, sliced onion, sumac and salt to a bowl and give it a good mix.

- ½ bunch Parsley
- ½ tsp. Salt
- 1½ tsp. Sumac
