Burgers are a great quick dinner for those busy weeknights. My husband loves his beef burgers but, I am definitely a chicken burger kind of gal. The frozen grocery store ones are honestly really unappetizing looking, so I never go near those. You never know what parts of the chicken they slip into there. Being so, I set out to make my own homemade version.

I bought lean ground chicken and experimented with different spices until I came up with these juicy burgers. The ground fennel and coriander along with the fresh garlic and onion give these chicken burgers a Mediterranean flare. I wanted to add a kick to these burgers and I happened to have mildly spicy Anaheim peppers in my fridge so they did the trick. You can substitute jalapeno or another pepper if you would prefer. When forming these burgers, I realized they were sticking to my hand a bit so, I added a little bit of olive oil to the mix which was a big help. I grilled these indoors on a large grill pan, for a total of 10 minutes. I served mine on sesame seed buns with arugula, tomato, red onion, and mayonnaise. Some other delicious options are grilled mushrooms, American or pepper-jack cheese, and lettuce instead of arugula.

These burgers can be made with ground turkey if you prefer it over chicken. Both ground chicken and turkey are leaner and have less saturated fat than beef making them a healthier alternative to hamburgers. These burgers freeze wonderfully with a sheet of parchment paper in between each burger and in an airtight baggie or container.

STEP 1

Peel and quarter the onion. Combine the onion, cloves of garlic and 2-inch piece of Anaheim pepper in a food processor. Pulse until finely chopped.

STEP 2

In a large bowl, mix the ground chicken, onion and garlic mixture, seasonings, bread crumbs, and 1 tablespoon of olive oil.

STEP 3

Mold the Burgers into 5 patties and set them aside on parchment paper.

STEP 4

Heat the grill pan on medium high heat and grease with remaining 1 tablespoon of olive oil.

STEP 5

Cook the patties on each side for 5-6 minutes on each side.

STEP 6

Prepare your toppings for the chicken burgers such as tomato slices, red onion, lettuce or arugula, mayonnaise and ketchup!

Put the chicken burgers together and serve with curly or french fries.
