This quick and easy rice dish is a staple in Middle Eastern cuisine. Vermicelli noodles are cooked until golden brown then tossed with white rice and cooked together for the perfect rice side dish.

This Middle-Eastern rice dish, typically known as Lebanese rice and vermicelli noodles is probably the most popular rice dish in our cuisine. Small and thin vermicelli noodles are sautéed until golden brown then cooked with white rice until fluffy and delicious.

If you’ve ever had the American boxed “Rice-a-Roni” of rice and noodles, this is pretty much the Lebanese version. You may recognize this rice recipe as I have included it with a few of my other recipes but, this dish is such a vital staple in Lebanese dishes that I felt it needed its own post. This rice dish is served with any Lebanese stew “yekhni” such as Bamya w roz (Okra stew), Bazela w roz (Pea stew) and other dishes such as Kafta bi soneye (Baked Kafta and Potatoes).

When toasting the vermicelli noodles I use vegetable oil but, you can use another oil such as olive oil. Many people also use Ghee (clarified butter) which gives is a wonderful taste but, I don’t tend to have that on hand at all times.

I buy my vermicelli noodles at my local Middle-Eastern grocer however, I have seen them sold in the international aisle at the supermarket. For basic rice dishes such as this, I use white Jasmine rice. It is a medium-long grain. However, if I am out, I do use basmati rice which also works great. One very important step is to wash the rice until the water runs clear. This step removes all the excess starch from the rice which ensures that the rice does not clump together and comes out nice and fluffy.

STEP 1

Soak the rice in cold water and rinse until the water runs clear. (About 3-4 times)

STEP 2

In a deep pot, heat the vegetable oil over medium-high heat.
Add the vermicelli noodles and cook for about 3-5 minutes until golden brown.
*Keep your eye on the noodles as they go from perfect to burnt in less than a minute!

STEP 3

Add the washed rice and mix together.
Add the water and salt and mix until combined. Cook over medium heat until boiling.

Once the water begins boiling, reduce heat to low and cover with lid.
Cook for 12-15 minutes until fluffy.

      I thought vermicelli noodles are egg-based noodles? If so strictly speaking this can’t be classified as a vegan dish.
