Individual Pizzas

Pizza is one of those dinners that is in constant rotation in my house. I whip up the dough pretty quickly, give it about an hour to an hour and half to rise, prepare my toppings and ta-da dinner is ready! What I love about pizza for dinner, is how customizable it is. For veggies, I always use whatever I have on hand which could be green peppers, black olives, mushrooms, tomatoes, and/or spinach. I happened to have leftover boiled chicken from a soup I made a couple days ago so, I shredded that and added some buffalo sauce for buffalo chicken pizza.

I love making pizza dough at home. In just a few basic steps and some patience to let the dough rise, you get a beautiful fluffy ball of dough. Sometimes ill add garlic powder or dried herbs like oregano to give it a little zest. This is the same basic dough recipe I use for 2 normal larger-sized pizzas. For the individual sized ones, I divided the dough into 6 smaller dough balls. If you want them even smaller (which I have done many times,) I would divide the dough into 12 pieces!

As for the sauce, I usually use the jars of traditional tomato pasta sauce, or canned tomato sauce or you can make homemade if you prefer. For the cheese, ill shred a block of mozzarella, or use pre-shredded mozzarella or even the Italian four-blend (Mozzarella, Provolone, Romano, and Asiago.)

STEP 1 - Homemade Dough

In the bowl of a stand mixer, add the active dry yeast, sugar and half the warm water.
Mix together and let sit for about 5-7 minutes
(Water must not be too hot or yeast will not proof.)

STEP 2

Add the flour, salt, garlic powder, and remaining water and knead the dough using the dough hook. Add in the olive oil.
Let mix until the dough comes together. (If too sticky, add more flour)

STEP 3

Once the dough has come together, form into a ball and lightly flour so it does not stick, and set aside to rise.

Cover with plastic wrap or a kitchen towel. Let rise for 1-1.5 hours depending on the temperature of your kitchen.

STEP 4

Once the dough has risen, divide into 6 pieces and reform into balls.
Cover and set aside for about 30 minutes as you prepare your toppings.

STEP 5

Preheat oven to 425 degrees.
Line a large baking sheet with parchment paper.

STEP 6

Wash and chop your veggies. Prepare your remaining toppings.

STEP 7

Roll out the dough to about 8-10 inches in diameter.
Place on the baking sheet.

STEP 8 - Pizza Toppings

Top with tomato sauce, cheese and toppings.

Bake for 12-14 minutes until cheese has fully melted.
Serve hot.
