Instructions
Option 1
Slice the mini cucumber in half and chop into bite-size pieces. Chop the Roma tomato into bite-size pieces as well.
Drain the water from the Libby’s Vegetables Whole Kernel Sweet Corn Single Serve Cup, and add to a small bowl with the chopped tomatoes and cucumbers and mix to combine.
**Add dressing over salad or on the side if desired.
Add the salad to your child’s lunchbox along with a variety of healthy snacks for them to enjoy.
Option 2
