Arayes kafta are quick and easy Lebanese sandwiches which consist of fresh kafta spread thin into pitabread and baked until crispy. This cheesy spin to arayes adds a delightful combination of salty akawi cheese and mozzarella to elevate these sandwiches to the next level.
Soak the akawi cheese in a medium-sized bowl of cold water for 30 minutes. Pat dry using a paper towel and shred using a large box grater. Add the shredded mozzarella and mix to combine.
Open up the pita and add about ½ cup of kafta and spread it out on one side of the pita (or tortilla) for an even layer of filling.Sprinkle ½ cup of the cheese mixture over the meat and cover with the other half of the pita (or tortilla). Place and additional tortilla on top and cover over the halfpita.
Arrange the arayes on a large baking sheet lined with parchment paper. Spray the top with non-stick spray (I used avocado oil spray).Bake for 10 minutes on 375 until the kafta is fully cooked and cheese has melted. *If using a griddler, start out on medium for the first 6-7 minutes until the meat is almost cooked through, then cook on high for the last few minutes to crisp up.
Cut the arayes kafta into triangles or in half. Enjoy!
