Instructions
Prepare the green beans by trimming the ends. Cut each string of green bean into 2-4 bite-sized pieces depending on its size. Wash and set aside.
Finely chop the onion and crush the garlic.
Set a pot over medium heat. Add the olive oil, chopped onion and crushed garlic. Sauté for 5 minutes until translucent.
Add the green beans and sauté for an additional 10 minutes until the green beans begin to wilt. Season with salt and pepper.
Add the can of diced tomatoes over the green beans. Add water to the can and pour over green beans along with the tomato paste.
Let simmer over medium-low heat for 25-30 minutes.
Serve at room temperature with pita bread.
